Happy Graduation to my Brother =)

Last Saturday was my brother's big day- His convocation!!! It had been some time ever since I bought a formal dress. Thus, I decided to look for a suitable dress for that event in 1Utama shopping center. The 1st shop I went to is my favourite shop, The Mod House.

I really love the clothes from there. The clothes are of high quality, nice design and the most important thing of all, the dresses suit my type of body shape. I tried a few dresses, love them all but chose one which suit me best. Besides, the service there was really good. Despite me trying so many times, they still smile nicely at me.

Hearty healthy breakfast - Gluten-free, flourless banana pancake and egg bacon baguette =)

Hey there!
I've always love to cook and try out new recipes these days. And thank God that I have a family who is so willing to be the 'white mice' of my AWESOME food. Today I made something really simple and nice for breakfast. I would like to share this simple recipe with you guys =)

1) Gluten-free, flourless banana pancake

Some of you may wonder how on earth to make pancakes without flour? It works, trust me. It’s so simple and delicious. Plus, most importantly, low calorie =)

For 8 pieces of banana pancake:
Preparation time: 5-10 minutes
Cooking time: 10-15 minutes

Ingredients
2 large bananas
2 eggs
1 teaspoon baking powder
3/4 cup of milk
½ teaspoon of sugar
½ teaspoon of salt
Olive oil
Maple syrup, butter, or jam or honey or fruits, to serve

Step by step

1. In a big bowl, crack in the eggs, add in baking powder, salt and sugar. Whisk to mix until all the baking powder lumps are gone.
2. In another bowl add in 2 large bananas (ripe ones). Lightly mash them. Do not mash too much. It would be nicer and fluffier if there are chunks of bananas.
3. Pour the mashed bananas into the egg mixture just now, add ¾ cup of any types of milk and stir to combine.

4. In a frying pan or even wok, pour a little oil or cooking spray, cook mini pancakes over a medium low heat. ½ soup scoop of batter is enough for each mini pancake. Flip the pancake over when bubbles appear on the surface and cook for about ½ minute more. Serve immediately when it’s hot.

5. For better taste, you may pour maple syrup with butter or honey or jam or even fruits like kiwi, blueberries, and strawberries according to your liking.

2) Egg bacon baguette

This is really good and simple to prepare. I would like to recommend this to those who do not have much time to prepare their breakfast, but yet they want to eat something nice to start their day with pure satisfaction =)

For 2 egg bacon baguettes:
Preparation time: 5minutes or less
Cooking time: 10minutes

Ingredients

Few pieces of bacon
1/4 of baguette
2 eggs
Salt and pepper, to season
Cooking oil

Step by step

1. Slice the baguette into 5cm thick. Make a hole by removing a little of the bread inside and put aside.

2. Cut the bacon into tiny pieces.

3. Add the cooking oil in the frying pan and heat the pan over medium heat. Fry the prepared bacon until brown. Transfer to a kitchen towel to drain excess oil.

4. Using the same frying pan, add a little oil, reduce the heat to medium-low and place the baguette on the pan. Crack an egg into a cup first, and then slowly, pour it into the hole of a baguette. Press the baguette firmly with fingers to avoid the eggs from leaking out.  And cook for 2 minutes. Then, flip over the baguette and press it firmly. Then cook another 1 minute. If you want the egg inside to be fully cooked, cook for another 2 minutes. But if you want it to be half cooked, remove it after 1 minute.

I did not press the front baguette and thus, the egg leaked out, whereas the back one was firmly pressed.

5. Sprinkle the cooked bacon on top of the baguette.

Have a nice day!
